For a base curry from which others may be derived. ## Ingredients * 4 large tomatoes * 4 medium-large onions * 2 cups water * 1 tbsp vegetable oil * 1 tbsp ginger paste * 1 tbsp garlic paste * 1 tbsp turmeric * 3/4 tbsp salt * 1/2 tsp nutmeg * 1/2 tsp cumin * 1/2 tsp cloves * 1/2 tsp coriander * 1/2 tsp cardamom * 1/2 tsp black pepper ## Preparation * Heat oil on medium-high, add spices, cook for 45 seconds * Add ginger and garlic, cook for 2 minutes * Add onions, cook until super soft and browning * Add tomatoes, cook until oil separates * Add salt and water, mix * Cook at medium heat, mostly covered, for 35 mins * Remove lid, cook for 8-10 mins * Use blender to turn into a paste * Share and enjoy [blender]: http://www.amazon.com/Calphalon-1804091-3-in-1-Immersion-Blender/dp/B005NGQWYE
