Curry

For a base curry from which others may be derived.

Ingredients

  • 4 large tomatoes
  • 4 medium-large onions
  • 2 cups water
  • 1 tbsp vegetable oil
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tbsp turmeric
  • 3/4 tbsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cumin
  • 1/2 tsp cloves
  • 1/2 tsp coriander
  • 1/2 tsp cardamom
  • 1/2 tsp black pepper

Preparation

  • Heat oil on medium-high, add spices, cook for 45 seconds
  • Add ginger and garlic, cook for 2 minutes
  • Add onions, cook until super soft and browning
  • Add tomatoes, cook until oil separates
  • Add salt and water, mix
  • Cook at medium heat, mostly covered, for 35 mins
  • Remove lid, cook for 8-10 mins
  • Use blender to turn into a paste
