Curry
For a base curry from which others may be derived.
Ingredients
- 4 large tomatoes
- 4 medium-large onions
- 2 cups water
- 1 tbsp vegetable oil
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tbsp turmeric
- 3/4 tbsp salt
- 1/2 tsp nutmeg
- 1/2 tsp cumin
- 1/2 tsp cloves
- 1/2 tsp coriander
- 1/2 tsp cardamom
- 1/2 tsp black pepper
Preparation
- Heat oil on medium-high, add spices, cook for 45 seconds
- Add ginger and garlic, cook for 2 minutes
- Add onions, cook until super soft and browning
- Add tomatoes, cook until oil separates
- Add salt and water, mix
- Cook at medium heat, mostly covered, for 35 mins
- Remove lid, cook for 8-10 mins
- Use blender to turn into a paste
